A creamy texture and fine, delicate bouquet with hints of green apple make this the perfect pairing for light antipasti, white meat, and traditional Salento fish dishes such as mussels au gratin ‘alla Tarantina’.
GRAPE VARIETY AND VINIFICATION
The Valle d’Itria’s mixed limestone soil gives crisp acidity and mineral salts to this historic native grape, Verdeca Bianco D’Alessano.
A late-maturing variety, it ripens in late September to early October, after the long, sundrenched Puglian summer. It has recently regained popularity for use as a monovarietal.
