TASTING NOTES

Rosone, from our Zito label, is an elegant, delicate white wine. Straw yellow in the glass, with greenish highlights.

On the nose it opens with an invigorating, citrussy note, set against a background of aromatic Mediterranean scrub with floral hints of orange blossom and wisteria, and notes of white-flesh and tropical fruit. In the mouth, it’s bursting with character, body and lively freshness.

Fragrant aromas lead to a dry, savoury palate with smooth mineral flavours, for superbly easy sipping.

FOOD PAIRINGS

Like a sea breeze on a summer’s day, this wine pairs perfectly with light, fresh dishes, raw fish antipasti or fried seafood, as well as local vegetarian specialities such as ciceri e tria (fresh pasta with chickpeas), fresh cheeses and seasonal vegetables.

GRAPE VARIETY AND VINIFICATION

Two varieties, both of which thrive in clay-limestone soil and ripen in September. Minutolo is a time-honoured local grape, historically known as fiano or moscatellina. Rediscovered in the year 2000 by oenologist Lino Carparelli, who worked with elderly local farmers to revive former vineyards in the Locorotondo area. The variety has since been developed and nurtured by new generations of winemakers, including Guglielmo Zito. Guyot training and fermentation in steel vats at low temperatures with limited oxygen contact produces a fragrant wine with an intense, characteristic aromatic note.
