GRAPE VARIETY AND VINIFICATION
Rosé wine is a cornerstone of Puglia’s viticulture, particularly in the Salento area.
In the past, the first grape must that trickled out of the vast stone wine vats would be fermented separately and used to make unbottled rosé wine known as “lagrima” that was kept for drinking at home, and much loved by the rural community.
Today, the classic pink colour is extracted from Primitivo I.G.P grapes through a short maceration of a few hours, followed by fermentation off the skins, and several months of ageing in steel vats.
FOOD PAIRINGS
Rosone rosé wine pairs well with a remarkably wide variety of foods.
It pairs wonderfully with meals of light, fresh dishes: raw fish antipasti and fish dishes; also recommended with fresh or young sheep and cow’s milk cheeses such as canestrato, pecorino, mozzarella, burrata or cacioricotta, accompanied by classic taralli.
